Black peppercorns are picked when the pea-sized berries are not quite ripe. They are then dried and winnowed and have a sweet undertone with a little bite. These berries are best when ground fresh in a pepper mill.
Pink peppercorns are the dried berries from the Baies rose plant. They have a delicate, fragrant, sweet and spicy flavor. Pink peppercorns go especially well in fruit sauces, vinaigrette’s and desserts.
White peppercorns start out the same as black peppercorns, but are allowed to ripen more fully on the vine. The black outer shell is then removed by soaking them in water until the black shell loosens.
