Snack Attack! - Easy Cookie Edition

I think I've already mentioned my love for the Oregon Hazelnut Chocolate Spread from Eliot's Nut Butters. I recently confirmed that they do, indeed, make a dang fine batch of "peanut butter" cookies. I threw a handful of oats into half the batch, for texture, and it really elevated this recipe.

1 c peanut butter (any nut/seed butter works)

1 c sugar (and crystalized sweetener works, and it's fine to reduce the amount)

1 egg (I haven't tried vegan eggs in this recipe yet)

*optional: handful of oats, handful of chopped nuts or dried fruit

Mix together, drop spoonfuls on a baking sheet (I like to line them with parchment paper for easy clean up), flatten with the tines of a fork, or bottom of a drinking glass. Bake at 350F for 8-12 minutes (until they lose most of their shine), and cool on a rack.
